Another fly by the seat of my pants culinary adventure: Mexican Crescent Roll Pie ( until I can think of a better name that's what I'll call it)

Well let me say....my intent was to make another crescent roll and hamburger ring b/c that was delicious and my husband loved it. But as fate would have it....we only had one hamburger patty and I needed at least two. I use those frozen bubba burgers for the record. I think he had snuck one after I told him not to so it wasn't my fault there wasn't enough meat ;)....ANYWAY....so I had to fly by the seat of my pants and come up with something to fill the place of the meat I needed.

I started by frying my one frozen bubba burger and some random onion and bellpepper slices. I really like this one product I bought awhile back and I will buy it again. It is called jennifer's garden and it has good quality onion and bellpepper slices and it was reasonable.

Once I had my onions and my bellpeppers tender and clear and my hamburger browned and busted up I then added some taco seasoning powder and some black beans I had in the freezer to make up for the lack of another burger.


these are the beans I added.....about half a bag was added 


Here the beans are shown on top and frozen.....I used a nonstick pan on medium heat



Once everything was cooked and looked relatively done I added a generous dollop of salsa for flavor




I then decided to add corn for some vegetables and also for some color



                                                     I drained and added the can of corn.....




I then went in search of some cheese and the crescent rolls.....I had three tubes but only used two


I opened it and accidently busted the dough in half


I then laid the triangles in the bottom of a deep casserole dish I had greased with veg oil lightly.....you can use whatever ceramic or glass dish you have......I just tried to cover the bottom of the pan and once the dough got tender I would smush it together to seal them together


I then added the meat/corn/onion mixture.....I could have left an inch on the sides and lay the crescent rolls over the top and make a dome but I decided not to.....


I then added some shredded cheddar to the top for flavor.....


                                      I then added some more crescent rolls to the top doing the smush technique


After baking it for 30 min on 350 it was a lovely brown




I also cooked some yellow rice to make sure my two youngest would eat something



I ended up with a half roll of crescent roll left over....



so I laid them out on a cookie sheet and.....


filled them with cheese and closed them back up and smushed the dough to seal it wherever it needed it and then I baked it for 20 min in the oven beside my Mexican Pie.....they loved them!

I forgot to take a picture early on but this was while I was eating my dinner which was very very very yummy!


Nuf said.....be making that Mexican Crescent Roll Pie again....tasty/easy....my kinda meal!!--Tips
